Background and Objective: Today, researchers to reduce the risks of synthetic preservatives have been focusing on the use of natural compounds, especially essential oils of high antioxidant and antimicrobial properties. Therefore, In the present study, Antimicrobial And Antioxidant Properties of Origanum vulgar ssp. Gracile essential oil were investigated.
Methods: After drying the plant and extracting essential oil, The oil was analyzed by GC/ MS for detection. Minimum Inhibitory Concentration (MIC) and Minimum bactericidal concentration (MBC) were determined by using microdilution method. The antioxidant activity was performed by using the DPPH method and Total phenolic material was measured by Folin Ciocalteu reagent.
Finding: According to results of the analysis of the GC-MS device, Carvacrol (49/33%) has the most component of essential oils. MIC and MBC oils on Escherichia coli respectively 1/25 and 2/5 percent and for Listeria monocytogenes bacteria, respectively were 0/625 and 1/25 percent. Also, the antioxidant activity 12/45 μg / ml, and the content of phenol 39/13 ± 4.13 mg of gallic acid in grams of essential oil was evaluated.
Conclusion: According to the results, Origanum vulgar essential oil can be used in the food industry to increase shelf-life and protection against oxidative, microbial agents and food-borne diseases.
